Composition:
Pinot Noir = 55%
Chardonnay = 45%
Including 50% reserve wine

Aging Process: Vinified for 10 months in stainless steel vats before bottling, this cuvée then rests 8 years on lees in our cellars.

Dosage: Brut - 8g/L

Champagne_MAX_COCHUT_TRADITION

This champagne has a pale yellow hue with subtle green reflections. Its effervescence is fine and elegant.

The first nose reveals toasted and grilled notes. Then, hints of undergrowth and hazelnut emerge, adding a gourmet and complex dimension.

The attack is smooth and fluid. On the palate, a beautiful freshness unfolds, with notes of yellow and white fruits. The finish is long-lasting, with pastry and yeasty notes, bringing a delicious touch to this cuvée.

This cuvée pairs perfectly with: Parmesan crisps as an aperitif, or white fish with a light citrus sauce.

Cuvée Réserve

Composition:
Pinot Noir = 70%
Chardonnay = 30%
Including reserve wine = 50%

Aging: Vinified for 10 months in stainless steel tanks before bottling, this cuvée then rests on lees in our cellars for 12 years.

Dosage: Brut - 11g/L

This champagne has a golden hue with subtle green reflections.

The nose reveals indulgent aromas of dried fruits (almonds, hazelnuts) and honey. It then opens up to rounder notes of candied fruits, quince paste, and mirabelle plum.

The attack on the palate is lively, marked by the freshness of tangy citrus notes. It then unveils delicious flavors of citrus marmalade and orange peel, accompanied by roasted cocoa notes. The finish is smooth, soft, and rounded, with hints of brioche and butter.

This cuvée pairs beautifully with: stuffed mushrooms as an aperitif, pumpkin and chestnut velouté, or a dish featuring grilled poultry.

Cuvée Millésime

The cuvée reveals a pale golden hue, enlivened by a fine, lively effervescence.

On the first nose, it charms with the freshness of ripe exotic fruits, enhanced by hints of honey and mirabelle plums. It then opens up to beautiful developed notes, indulgent and pastry-like, evoking quince paste and candied fruits. Delicate roasted nuances, such as cocoa and coffee, add depth and softness.

On the palate, the attack is fresh and vibrant, marked by ripe citrus fruits. It then evolves towards notes of brioche and vanilla, enriched by toasted aromas, dried fruits, and gingerbread, lending complexity and length. The finish is smooth and silky, with subtle hints of vanilla custard.

This cuvée pairs perfectly with: roasted poultry, mushroom risotto, aged Comté cheese, or citrus scallop carpaccio.

Cuvée Blanc de Noirs

Dosage: Brut - 8g/L

This delicate cuvée features a pale rosé-gold hue with elegant effervescence.
The first nose reveals fresh red fruit notes, characterized by a vibrant fruity and tangy profile. Hints of redcurrant and Morello cherry suggest the freshness of this cuvée. The finish is refined and refreshing, with lingering notes of crushed raspberry and fresh green pepper.

On the palate, this champagne is lively and fresh. The red fruit aromas are complemented by subtle spicy notes of cinnamon and licorice. The finish is long and invigorating, with a beautiful persistence and complex hints of candied apricot and peach.
This cuvée pairs perfectly with: pickles as an aperitif, fish tartare with citrus and passion fruit, citrus ceviche, or green apple sorbet.

CHAMPAGNE_MAX_COCHUT_GRANDCRU

Vibrant in its youth, this cuvée reveals a delicate floral freshness, with notes of white peony, lily of the valley, and hawthorn. Aromatic nuances further enrich its profile, with hints of linden, verbena, and menthol enhancing the harmony.

With patience, the aromatic complexity characteristic of Grand Cru Pinot Noir emerges: the delicacy of wild strawberry, the structure of cherry, and the intensity of blueberry—a gourmet trio of undeniable depth.

This Blanc de Noirs stands out with its chiseled structure, mineral richness, and sharp precision. Its fine and graceful bubbles envelop the palate, amplifying both power and structure with a refined texture.

Coveted for its finesse, yet marked by a bold fruit freshness, this cuvée reveals notes of white raspberry, fig, and lingonberry. The finish lingers with a citrusy touch of pomelo, adding a final note of vibrancy.
